PSU Announces 2010 Meat Safety Workshops

UNIVERSITY PARK – Faculty and Staff from Penn State University’s Department of Dairy and Animal Science and Department of Food Science have scheduled food safety programs targeted to meat and poultry processors.  Workshops include Hazard Analysis and Critical Control Point (HACCP) programs, Food Defense, and special sessions for Escherichia coli O157:H7 and Listeria monocytogenes.

Program developers have once again decided to offer workshops in Central Pennsylvania at Penn State’s University Park campus, and also in Southeast Pennsylvania at the Chester County Extension Office in West Chester.  As well, Penn State students may take enroll in the May HACCP program at University Park at a discounted rate and receive 1 credit in Food Science.

Program Dates:

  • May 11-13: HACCP for Meat and Poultry Processors, University Park, PA
  • August 24: HACCP Validation Workshop, University Park, PA
  • August 25 (a.m.): Control and Prevention of Listeria monocytogenes in Ready-to-Eat Meat and Poultry Products, University Park, PA
  • August 25 (p.m.): E. coli O157:H7 Interventions and Monitoring in Meat Establishments, University Park, PA
  • August 26: Food Defense, University Park, PA
  • September 21-23: HACCP for Meat and Poultry Processors, West Chester, PA
  • November 30: HACCP Validation Workshop, West Chester, PA
  • December 1 (a.m.): Control and Prevention of Listeria monocytogenes in Ready-to-Eat Meat and Poultry Products, West Chester, PA
  • December 1 (p.m.): E. coli O157:H7 Interventions and Monitoring in Meat Establishments, West Chester, PA
  • December 2: Food Defense, West Chester, PA
