Shoring up nitrites in cured meats

The American Meat Institute engaged YouTube as a way to publicly convey pertinent information about meat.  Below are two videos that address meat and nitrite.  An appreciable clarification in the first video, which is a general summary of processed meat manufacturing with a focus on cured products, is that processed is not synonymous with cured meat, rather that cured meat is a sub-class of processed meat.  Not all processed meat is formulated with nitrite.  The second video specifically addresses nitrites by giving perspectives on differing sources of nitrite and supplying some food safety information.  Of course, one is free to draw one’s own conclusions about cured meats.
